Recipes for daring darlings – Salsa Verde Recipe


Salsa Verde

Ingredients

2-3 cloves garlic , peeled
1 small handful capers
1 small handful gherkins pickled in sweet vinegar
5-6 anchovy fillets
2 large handfuls parsley
1 bunch fresh basil
1 handful fresh mint
1 tablespoon Dijon mustard
3 tablespoons red wine vinegar or half or replaced by lemon juice
125 – 250ml really good extra virgin olive oil
sea salt
freshly ground black pepper
Optional
1 Tablespoon Cumin
1 – 3 chili chopped
Lemon rind

Method

You can chop the garlic, capers, gherkins, anchovies and herbs and put them into a bowl. Add the mustard and vinegar, then slowly stir in the olive oil until you achieve the right consistency. Balance the flavours with freshly ground black pepper, a bit of salt and maybe a little more vinegar.

But it is much faster & equally delicious if you put all the ingredients into a bladed blender (not liquefy-er!) and blend until it is between coarsely chopped and fine – test & taste until you like the consistency.

Serve this with steak, braaivleis, chicken, salad, stews, literally anything.
It is delicious, it zooshes up any meal and it is Super healthy and really Good for you!
