In January 2018 Seven Springs completed their own cellar, a re-furbished nearby warehouse which a wonderful neighbour offered the Pearsons. The wines were previously vinified at Iona then Almenkerk and now finally in their own cellar! These beautiful wines are Going places!

Since buying the land in 2006, the Seven Springs team has made great progress. Their wines have been collecting accolades, awards and praises right from the start. This year their 2012 Syrah earned a gold Decanter World Wine Award, and this from vines less than 5 years old! Ex Africa Semper Aliquid Novi!
Seven Springs Vineyard is situated on the R320 Hemel en Aarde Valley road, between the seaside town of Hermanus and the Casino & Spa Town of Caledon, in the picturesque Western Cape, South Africa. The vineyard nestles between Shaws Mountain to the north and the Teslaarsdal Mountain Range to the south, with Walker Bay and the Atlantic Ocean beyond these mountains. It is this oceanic influence, coupled with our shale derived soils, known locally as Bokkeveld Shale, that gives our vines the potential to produce exceptional grapes from both north and south facing vineyards. Noble varieties, Chardonnay, Sauvignon Blanc, Syrah and Pinot Noir, have been planted to express the full potential of each cultivar.

Judging by the premium wines it has been producing, winemaker Riana van der Merwe and vineyard manager Peter Davison must be two very busy people.
With wines earning so much respect on the world wine scene, one should definitely visit the new Cellar and tasting room! Everybody should taste wines described by words such as: “Lovely fleshy style but with substance”. “very well balanced”*, “a trace of elderflower or gooseberry herbaceousness”, “a lovely aroma… all sorts of luscious hints, but with a core of steely precision”, “all nicely nutty”**.

Why would a British husband and wife team invest so much time, money and energy into the production of wine when they could be taking it easy? Speaking with Tim Pearson it is clear to see the passion they have is to produce the best wine they can from what they feel is one of the very best wine regions in South Africa.
Buying land in 2006, planting in 2007 and 2008, harvesting in 2010, and here they are a few years later winning international awards; but Tim says “whilst the awards are great, and praise from the critics positive, they simply help put you on the wine map. It is the feedback from our customers that is and always will be the most important to us. Our vision is to continue to produce wines of quality that over deliver for their price point.”
Believing in building a strong team, Tim and his wife Vaughan work with closely with Riana Van der Merwe as their winemaker and Peter Davison as vineyard manager, to produce a range of five wines. Each is a single varietal produced to reflect old world characteristics with new world fruit.
Tim goes on to say “Our winemaker, Riana, is a very talented young lady and we are delighted to work with her, supporting her approach in the winery: one of minimal intervention. With her light touch she allows the fruit to give of its best and it is this hands-off approach which is so highly praised by the critics who talk of lingering minerality and steely precision”.
Peter Davison has been a part of the Seven Springs team since day one; overseeing the planting and care of the vines. His attention throughout the year is responsible for the production of top quality fruit and gives Riana a head start on the road to producing the 70,000 bottles each year.
The Seven Springs Vineyard wines: Two reds (Pinot Noir and Syrah) and three whites (Sauvignon Blanc, oaked Chardonnay and unoaked Chardonnay ) are currently available at a number of local restaurants in and around Hermanus including The Marine, Grootbos Nature Reserve, Burgundy Restaurant, Fisherman’s Cottage, Lemon Butta and Moggs. They are also enjoyed in the UK, Denmark, Germany and Mauritius. In the US the wines are re-branded Over The Mountain to reflect the region of origin are now also exported to Belgium, Netherlands and Sweden.
To run this vineyard remotely, from the northern hemisphere, makes this whole venture one which is unique in the wine world. Tim and Vaughan maximise the opportunity afforded by electronic communication: “Without the internet, Skype, email and social media etc. etc. it would simply be impossible to do what we do. Keeping track of the accounts is a challenge in itself but when you sit in your UK office and watch your computer being worked by the accountant sitting in Stellenbosch you have to wonder what more will be possible in the future” says Vaughan. Tim is well known in the world of social media and has opened up national and international markets by his innovative use of technology.

Seven Springs Vineyard received a Decanter World Wine Awards (DWWA)
Silver for their 2014 Chardonnay.
2 Silver International Wine and Spirit Competition (IWSC)
Silver awards for their 2013 Syrah and 2013 Pinot Noir.
All these 3 international competitions are akin to the Olympics or World Championships
in athletics.
Also in this years Platter guide (2017 version) Seven Springs Vineyard has four
of their wines achieving 4* (Pinot Noir, Syrah, Chardonnay (oaked) and
Sauvignon Blanc) and their last wine, our Unoaked Chardonnay received a 3.5*.
Seven Springs Vineyard also had their 2013 Chardonnay accepted for the Nederburg Wine
Auction earlier this year which is a very big honour!
