As the vineyards stir, kissed by longer days and the warm sun, each tiny bud whispers promises of extraordinary fruit. Spring is nature’s encore, inspiring the artistry of our winemakers as they turn terroir into bottled poetry.

In Ayurveda, this magical transition – from the hibernation of winter to the blossoming energy of early summer – is called the Kapha season. A time when the Earth and Water elements have cosied up in every nook, while the Air and Ether (“Akasha”) of autumn have bid their temporary farewells. Now is the perfect moment to embrace lightness, refresh our spirits, and (perhaps most importantly) refresh our palates! 

So, what should grace your palate in spring? According to the wisdom of Ayurveda, we crave flavors that uplift and cleanse:

Pungent (Fire + Air): Think cayenne, ginger, radish, and garlic – zingy, fiery friends.

Bitter (Air + Ether): From turmeric to dandelion, these bring that cleansing breath of fresh air.

Astringent (Air + Earth): Pomegranate, chickpeas, and crisp raw veggies – earthy and grounding, with a bite!

Inspired by nature’s bounty and Ayurveda’s wisdom, Creation’s new Spring Pairing Menu is a love letter to biodiversity itself! With more than 80% of ingredients sourced locally (from within a mere 80km radius), this menu showcases not only our surroundings but also the artistry of our chefs. Each dish tells a story, with flavours as diverse as the landscape and elements from indigenous plants to sea shells elevating every bite.

The Spring Menu is 80% plant-based, but fear not carnivores! You’ll still find the freshest local fish and sustainably sourced meats.

The bright and cheerful Creation Sauvignon Blanc is paired with a cool Cucumber and Celery Gazpacho. A wild sorrel wink adds zing, like a cheeky breeze on a summer’s day. Light, refreshing, and oh-so-perfect to kick off your spring soirée!

Chapter 2: Absolutely Brilliant Chardonnay! 

Creation Reserve Chardonnay takes centre stage alongside your choice of Trout or Agedashi Tofu. Waterblommetjies and pea shoots dance around a creamy Celeriac, Vanilla, and Orange Purée, while wild garlic and coconut cream add a flirtatious complexity. The Chardonnay, naturally, plays the perfect partner – rich, bright, and delightfully complex.

Topped with luxurious Turmeric, Coconut, and Cashew Nut Custard, this dish is pure harmony. Indigenous flavours from Sundried Tomato and Dune Spinach Salsa to a Date, Ginger, and Spekboom Chutney lend a tangy brightness to this celebration of South African soul food.

What could be more joyful than bubbles? The Creation Elation Cap Classique is paired with a creamy Honeybush Milk Tart Affogato, and you’re invited to dive into a symphony of Grilled Peaches, Naartjie Dust, cinnamon, and cardamom. The citrus notes of the Cap Classique shimmer like sunlight through glass, bringing warmth and cheer to every sip and spoonful.
